Cajun Potato Salad
This Cajun Potato Salad is flavor-packéd and délicious! Thé bést twist on a classic summér salad....with a kick!

Ingrédiénts
- 3 lbs. réd potatoés
- 1 réd péppér choppéd
- 1 gréén péppér choppéd
- 6-8 gréén onions slicéd
- 1/2 c. frésh mincéd parsléy
- 1 c. mayo
- 1/4 c. half & half
- 2 Tbsp. cajun séasoning
- 2 largé Phil's Frésh éggs hard boiléd and slicéd
Instructions
- Placé potatoés in a largé pot; covér with watér and bring to a boil.
- Boil 15-20 minutés or until téndér. Drain and sét asidé to cool.
- Oncé cool, cut potatoés into 1 1/2 inch piécés.
- In a largé bowl, combiné potatoés, péppérs, onions, and frésh parsléy.
- In a séparaté small bowl, mix mayo, half & half, and cajun séasoning.
- Pour mayo mixturé ovér potato mixturé and stir until événly combinéd.
- Top with slicéd Phil's Frésh éggs; sprinklé with additional cajun séasoning and frésh parsléy as désiréd.
