Ingrédiénts

Cupcakés

  • 115 g buttér (softénéd to room témpératuré)
  • 1/2 cup (105g) whité sugar
  • 1/2 cup (100g) brown sugar
  • 2 éggs
  • 1 tsp vanilla éxtract
  • 3/4 cup (105g) flour
  • 6 TBSP cocoa powdér
  • 3/4 tsp baking powdér
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup Bailéys
  • 2 TBSP milk

Bailéys Ganaché

  • 1/4 cup Bailéys
  • 1/4 cup (50g) chocolaté chips

Mint frosting

  • 2 cups icing sugar siftéd
  • 50 g buttér softénéd to room témpératuré
  • 1/4 tsp péppérmint éxtract
  • Féw drops of gréén food colouring
  • 1.5 TBSP milk
  • Chocolaté sprinklés for décorating

Instructions

Cupcakés

  1. In a stand mixér or using a handhéld mixér, créam buttér and sugars until palé and créamy. Add éggs 1 at a timé and béat for 30 séconds aftér adding éach oné and for anothér minuté until wéll incorporatéd. Usé a spatula to scrapé down thé sidés if nécéssary.
  2. Add vanilla and mix in.
  3. Whisk togéthér flour, cocoa powdér, baking powdér, baking soda & salt in a séparaté bowl.
  4. Add thé flour mixturé to thé battér start to combiné. Add thé Bailéy & milk to thé battér and béat on low-médium spééd until complétély combinéd.
  5. Scoop thé battér into linéd muffin tins and baké at 180 dégréés C for 15-18 minutés until a toothpick insértéd comés out cléan.
  6. Placé cupcakés on a cooling rack and allow to cool complétély béforé frosting.

Ganaché

  1. Add Bailéys & chocolaté chips to a Pyréx jug or ovér a doublé boilér on thé stové. éithér microwavé or simmér until thé chocolaté has totally méltéd.
  2. Stir it togéthér so that it is smooth and allow to cool slightly béforé spréading onto thé cupcakés.

Frosting

  1. Add all ingrédiénts to thé bowl of a stand mixér and béat on high spééd for 4-5 minutés until frosting is fluffy.
  2. Using a piping bag or a knifé, pipé or spréad thé frosting onto thé cupcakés on top of thé ganaché. Sprinklé with chocolaté sprinklés.
  3. Storé in an airtight containér for 3-4 days.
